Roasted Pumpkin Seeds

Mix 1 cup of pumpkin seeds with 1 tablespoon of cooking oil. Spread out on a baking pan. Roast at 350 degrees for 10 minutes or until golden. Cool. Salt, if desired.

Potawatomi Stuffed Sugar Pumpkin

1 sugar pumpkin 1 med onion, chopped
1 tsp salt 1 cup cooked wild or brown rice
1/2 tsp dry mustard 3 eggs, beaten
1-2 tblsp vegetable oil 1 tsp sage and salt
1 lb ground venison, buffalo, or beef 1/4 tsp pepper

Preheat oven at 350 degrees. Cut and clean out pumpkin. Prick cavity with fork. Rub inside with 1 tsp salt and dry mustard. Heat oil in large skillet over med-high heat. Add meat and onion, saute' until brown. Remove from heat and stir in wild rice, eggs, sage, salt and pepper. Stuff mix in pumpkin. Put in shallow baking dish and add water to come up 1/2 inch. Bake 1 1/2 hours till pumpkin is tender. Cut into wedges. Serves 6.

Bob's Famous Pumpkin Soup

1 lg onion, chopped 1/8 tsp nutmeg
1 tart apple, peeled and chopped 1 tsp curry powder
3 tblsp butter 13 oz evaporated milk
2 cups canned pumpkin 1/2 cup water
2 14 1/2 oz chicken broth Sunflower seeds (optional)
1 hollowed out medium pumpkin, raw

Saute' onion and apple in butter. Mash fine, add broth, pumpkin and spices. Simmer for 15 minutes. Blend mixture in blender. Add milk, salt and pepper to taste. Simmer for 10 minutes. Serve in hollowed-out pumpkin. Top with nutmeg and sunflower seeds. Serves 6.

Pumpkin Candy

Peel raw pumpkin. Cut into 1/2 X 4 inch pieces. Blanch for 1 minute. Roll in crystal sugar and dehydrate until done.

Red Pickled Eggs

6 eggs 1 small beet
1 cup white vinegar 1 tsp salt
1/2 tsp each black and red pepper 1 cup water

Put eggs in saucepan and add enough cold water to cover eggs. Bring to boil. Turn dow the heat, cover and simmer for 17 minutes. Drain, cool, and peel eggs. Wash the beet and cut off the top and stem. Combine vinegar, salt, black and red pepper and beet in a one-quart glass jar. Pour the boiling vinegar solution over them. Cool. Stir gently. Cover the jar and refrigerate overnight. In the morning, the eggs will be pink. Remove the beet and enjoy!

Pumpkin Bread

1 cup oil 1/2 tsp baking soda
3 cups sugar 1/2 tsp baking powder
3 eggs 1 cup whole-wheat flour
1 14.5 oz can pumpkin 1 tsp vanilla
2 1/2 tblsp Aspen spices 1 cup pecans, chopped

Cream sugar and oil. Add eggs and pumpkin. Sift all dry ingredients and stir into pumpkin mix. Add vanilla and pecans. Pour in three small loaf pans (greased and floured). Bake 350 degrees for 1 hour and 20 minutes.

Pumpcorn Muffins

1/2 cup safflower oil 1 cup cornmeal
1/2 cup honey 1 tblsp baking powder
1 1/2 cup canned pumpkin 1 tsp cinnamon
1 cup water 1/2 tsp ginger
2 1/4 cups pastry flower 1/4 tsp cloves and nutmeg

Beat together safflower oil, honey, pumpkin, and water. In separate bowl combine flour, cornmeal, baking powder, cinnamon, ginger, cloves and nutmeg. Blend dry ingredients into wet just until combined. Pour into prepared muffin tins. Bake at 375 degrees for 30 minutes. Serve muffins with Aloha from Oregon jellies and jams available for sale in the farm store.

Lynn's Famous Stuffed Pumpkin Dessert

Take a small sugar pie pumpkin, wash well and cut out the top. Scoop out the seeds (save for roasting). Stuff the pumpkin with a mixture of sliced apples, raisins, brown sugar, lemon juice, cinnamon, nutmeg, and allspice to taste. Replace the top and bake on a cookie sheet at 350 degrees for at least one hour. The dessert is done when the pumpkin and insides are soft. To serve, scoop out mixture, making sure to get some of the pumpkin. Top with roasted pumpkin seeds and /or vanilla ice cream. This is a great dessert to make with kid help!

How to Cook a Fresh Pumpkin

Buy a sugar pie pumpkin. Wash, dry and scrape out the seeds and strings. Dry seeds on a paper towel.
Conventional oven: Place pumpkin halves, shell side up, in a big pan. Bake at 325 degrees until tender. Cool. Scrape out the pumpkin flesh.
Microwave oven: Peel pumpkin and cut flesh into cubes. Place 2 cups of pumpkin cubes in a ceramic or glass container. Cover with plastic wrap. Cook at 100% or on high for 8 minutes. Remove from oven and remove wrap carefully.
